Description

Come enjoy all things boozy, with a three-day (four night) residential course at Castello di Potentino -- a magnificent restored medieval castle in Tuscany.

The course will be led by mixologist and bartender of the year (2015) Ivy Mix, who will guide you through the ins and outs of spirits and mixology.

Founder of Leyenda Brooklyn Cocteleria and Speed-Rack, Ivy will lead you through sessions exploring both the fundamentals of spirits, as well as techniques and recipes for crafting your own cocktails. Through the course you will gain a better understanding of where and how spirits are made, and how you can best put them to use.

You will also have the chance to try your hand at small-batch gin distillation with Alexander Greene, using a variety of botanicals foraged from around the Castle. You can then see the commercial side of distillation with a tour of a local grappa distillery, making one of Italy’s most popular liquors.

Everyday includes optional yoga sessions and free time to discover the beautiful Amiata Valley surrounding the castle. You’ll have the chance to relax by the pool, enjoy a massage, go for a hike on the mountain or explore the castle’s vineyards and cantina.

You will eat local, seasonal meals highlighting produce sourced from Potentino’s vegetable garden, as well as local pecorino cheeses, salumi, Potentino olive oil, wood-fired bread and more. The Potentino menu always features a wide-range of traditional dishes that highlight our own ingredients, and introducing you to the best of rustic Tuscan cuisine. Dinners will include three courses, featuring both Ivy’s cocktails as well as Potentino’s award-winning wine and grappa.

Wednesday – Day 1

Transfer from Rome airport to Potentino

Potentino welcome aperitivo and an introduction to the Castle from Charlotte Horton and Alexander Greene. There will be a welcome wine tasting of wines from the castle’s vineyards followed by pre-dinner cocktail. Dinner under the loggia of local produce and goodies from Potentino’s vegetable garden.

 

Thursday – Day 2


Morning Session: Intro to spirits – discuss and review the origins of spirits and today’s most commonly used spirits. Ivy will go into flavour profiles, tasting notes, and the fundamentals of good booze.

Lunch at Potentino under the Loggia

Afternoon yoga and free time to enjoy the Castle

Evening session: Intro to Mixology – the best techniques and methods to understanding how to craft a delicious cocktail.

Dinner at Potentino featuring four-course meal with Ivy’s cocktails, as well as Potentino wine and grappa

 

Friday – Day 3

Morning – Foraging walk to collect botanicals for small-batch gin distillation and the evening mixology session featuring gin!

Morning Session: Intro to distilling – how to use your foraged botanicals in a distillation, with Alexander and Ivy.

Lunch under the loggia

Free time and late afternoon yoga session

Evening Session: Mixology workshop focused on using your homemade gin as well as a range of foraged ingredients

Dinner at Potentino featuring three-course meal with Ivy’s cocktails, as well as Potentino wine and grappa

Saturday – Day 4

Morning Session: Intro to commercial distillation with Ivy, including an outing and tour of a local Grappa Distillery (where Potentino has its own grappa distilled).

Lunch out at a local trattoria.

Afternoon yoga session and free time to relax at the Castle

Evening Session: Final mixings– Ivy will discuss how to pair cocktails with food, reviewing how a cocktail an elevate the dish as well as providing the opportunity for everyone to practice crafting their own favourite cocktail.

Dinner at Potentino featuring three-course meal with Ivy’s cocktails, as well as Potentino wine and grappa.
